Vienna is cooking differently than it was just a few years ago. This season's most interesting openings don't arrive with big gestures, they arrive with clear convictions: zero waste as fine dining, hot pot as a social ritual, African Latin American fusion cooking as personal life story. Anyone wondering where the city's food scene is heading will find six answers here.
Ossa: Zero Waste as Fine Dining
At Ossa in Währing, Peruvian chef Miguel Ángel Giraldo has built a six course tasting menu with no fixed dishes, only season, region, and a strict commitment to wasting nothing. Bone to skin, root to leaf. What sounds like a constraint turns out to be freeing: the experience is intimate, precise, and surprisingly generous. Open Thursday to Sunday at Bischof Faber Platz 8.
Dampha Kitchen: Gambia and Spain on One Plate
At Yppenplatz, Khalifa Dampha has finally found a permanent home after five years running a pop-up. Dampha Kitchen combines the flavors of Gambia and Spain: spicy peanut butter chicken, jollof rice, empanadas, tacos with an African twist. Food that tells stories and is best shared around the table.
Happy Lamb: Mongolian Hot Pot as an Evening Ritual
At Barnabitengasse 5 in the sixth district, Happy Lamb runs a Mongolian hot pot concept. The pot sits in the middle of the table, and the time belongs to the table. Bone marrow broth simmered for eight hours, paper thin Irish lamb, ribeye, seafood, fresh made noodles. Hot pot here isn't a quick dinner, it's an evening.
Lanz Lamian, Carioca, and Poco
At Lanz Lamian on Hoher Markt 8/9, everything centers on one of the world's oldest noodle techniques: hand pulled Lanzhou noodles and biang biang noodles, made fresh daily, with a small outdoor seating area.
Carioca has found a new home at Hamburgerstraße 16 in the fifth district: Brazilian comfort food, more than twenty cachaças, caipirinhas, and a mood that feels closer to Copacabana at night than Vienna.
And at the new boutique Hotel Miiro in Spittelberg, Poco opened on Kirchbergasse at the end of March: creative pizza made with crisp whole grain dough, dough balls with garlic butter, breakfast, panuozzi, and good drinks. No grand concept, just a place people enjoy sitting in.
Six concepts, six completely different starting points, and still the same thread running through them: cooking that tells a story instead of simply serving a dish.
